Scorpo Wines Eocene Single Vineyard Chardonnay is grown in red brown clay loam soils derived from Eocene volcanic rock, which dates back 40 million years. All the fruit is handpicked.
At 70-100 metres above sea level on a steep north-north-east facing slope, the vineyard is essentially a suntrap. Combined with the drainage provided by the soil, it allows the grapes to ripen slowly.
The fruit is whole bunch pressed and sent directly to French oak barriques, typically 20% new and the remainder 1-2 years old. After fermentation with wild yeasts, the wine is sulphured to prevent malolactic fermentation.
The wine matures for around 12 months on lees without stirring. It is then bottled and cellared for two years before release.
Pale straw, Scorpo Wines Eocene Single Vineyard Chardonnay has fresh citrus flavours with a deep mineral seam and spicy complexity. Cellaring potential is five years.
